Pizza Rice Casserole

Ingredients:

 

2 cups cooked rice
2 cups cottage cheese
3/4 lb. ground beef or turkey
1 onion, chopped
2 cups tomato sauce
1/4 t. garlic salt
1 t. brown sugar
1 t. salt
1/4 t. pepper
1/2 t. oregano
1 t. parsley flakes
1 cup shredded cheese

Directions:

  1. Combine rice with cottage cheese
  2. Brown ground beef or turkey and onion in large skillet.  Add tomato sauce, garlic salt, brown sugar, salt, pepper, oregano, and parsley flakes.  Cover and simmer 15 minutes
  3. Layer into greased 2-quart casserole in following order: 1/3 of rice mixture, 1/3 of meat sauce.  Repeat two times and top with shredded cheese
  4. Bake at 325° for 30-40 minutes or until hot and bubbly

This was really appreciated at a recent church potluck.
