Oatmeal-Raisin Muffins



1/3 cup butter or margarine
1/2 cup packed brown sugar
2 eggs
1- 1/2 cups oatmeal, uncooked
1-1/4 cups flour
1-1/2 tsp. ground cinnamon


1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup applesauce
2 T. water
1/2 cup dark seedless raisins
In large bowl, cream butter and sugar until blended.  Add eggs; beat until fairly smooth.  Add oats, flour, cinnamon, baking powder, baking soda, salt, applesauce, and water; stir just until moistened (batter will be lumpy).  Fold raisins into batter.

Spoon batter into paper-lined or greased muffin tins.  Bake at 400 for 20 to 25 minutes until golden and toothpick inserted in center comes out clean.  Cool 5 minutes before removing from pan; serve warm.  Or cool on wire rack to serve later
