HUMMOUS-This is a middle eastern HI PROTEIN DISH like party dip, (I use it for that) which YOU will use as sandwich spread as it's thick like chicken salad. It's very satisfying and the highest food you could find in calcium due to sesame, hence it replaces HI-COL, MUCUS producing cheese & milk. All bean-based dishes sour in 4 days so we will freeze half of the finished product, making a lot at a time, defrosting 3 days worth at a time. My kids are crazy about it. Your customers will be, too. HAVE ON HAND: One jar/Can TAHINI, (a kind of peanut butter only made w. sesame seeds, avail at fancy supermart, Israeli, Iranian, Arab grocery stores.) Dry raw garbanzo beans, onion, soy sauce, pckg untoasted sesame seeds, garlic, lemons, 1 sml. can chopped olives, cumin, curry powder, Cilantro, arugula, Chile-Sesame oil, (oriental section.) chopped sour Pickles optional. NOW, HOW TO SERVE IS THE TRICK. Heat a pita on a fire, toast it up, cut in two, fill both sides with hummos, add pickles, salad, tomato and if you could learn to make those GARBANZO patties. You'd have to go to a FALFAFEL JOINT and study that. I'm no good at that. Then you drop a few of them in, too. Wrap in paper, worth 3$ a sandwich and it's so cheap!!! You can buy pitas for four dozen for a dollar! Find an ethnic store.

METHOD-SOAK beans over night. Simmer in crock pot until soft. While beans cook, toast sesame seeds in iron skillet, stirring until they pop. Cool. Reserve most of liquid in beanpot for tomorrow's soup, leave 1/2 cup remaining liquid while you mash beans into a paste. Add 1 part tahini to 3 parts beans, mashing with finely chopped onions, lemon juice, soy sauce. Add toasted sesame seeds to the bean/tahini mix, add a few dashes of chile sesame oil, your spices, cumin, curry, lots of crushed fresh garlic, olives, cilantro and lemon juice. Freeze what you can't eat in plastic, not foil, as there's acid in hummous and aluminum leaches out of foil. Later, hummous thaws good as new. Serve with chips (baked only, never fried) or in sandwiches w. pickle/ lettuce/tomato. Or on a homemade whole wheat sesame cracker. Kids LOVE it and will eat this stuff inside a sandwich!

VEGETARIAN TOFU PATTIES: TOFU (soy curd) has natural plant hormones that supply body with the master hormone that prevents aging. INGRED: tofu, almonds, bread crumbs, water chestnuts, minced carrot/celery, onion, garlic, crumbs, (I use 2 slices sprouted wheat bread/toasted as crumbs. METHOD: Toast bread slices, break into crumbs. Soak Almonds then peel off skin. Open a can of creamed corn. Heat heavy iron skillet, pour in half olive oil, half ghee or clarified butter. Mince and saute garlic, onion, celery, mushrooms, parsley or coriander, (cilantro) bell pepper. Then add shredded carrots/ bell peppers. Food process or use large holes on grater. Add ground or chopped nuts, chopped water chestnuts, 1 lb tofu, Salt/pepper, vegie broth, celery seed, thyme, oregano, sage, seasalt. If you have a happy chicken like mine, stir in a raw egg with creamed corn. It helps to make the mass 'firm up' in the cooking. Shape this soggy mess into a croquette, dredge in brown flour/sesame seeds; fry this dredged patty in olive oil /butter both sides litely, The thing is so wet you're amazed you can dredge it, fry it, but it hardens up in the pan. After seconds of frying, transfer to oven dish, bake 20 min 325 deg. You can add goat cheese and tomato sauce last 5 min. OR bake in MEATLOAF shape in a tin. Fridge slices. When customer orders one, put it in steamer with weenies, in ten sec it's warm enuf for sandwich. I'd add mayo to the sandwich, lettuce, tomato, maybe some hummos sauce.

HOME MADE BREAD- Make your own burger buns. Let pckg dry yeast rise in 1 tsp sugar, 1/2 cup of warm spring water. Make 3 cups vegie broth night before by simmering vegies that U-eat for dinner. Save broth in fridge. I make bread after dinner, let dough sit all night and bake it next morning early. So, you've got this broth, Potato water, etc. Add 1/2 cup brown sugar, corn oil, and if the broth is HOT, COOL it as you can't let yeast or flour touch anything over body temp. Throw 3-4 cups whole grain wheat/mixed w. rye flour into broth, (a little millet flour is good if U-can find) and a tsp of gluten (avail. at healthfood store) for each cup of flour. Stir so it's very soft, then add, stir in the yeast which has proven it's alive by getting a thick scum on it. Stir more flour into dough until it's mushy verging on firm. Let rise in bowl in warm spot in kitchen, FOR MINIMUM OF 2 HRS, a warm corner, even in a pinch the open oven set on super low. 2-hr yeast raising period is to inactivate phytic acid. When doubled in size, turn on dusted board, and knead, as you do, adding several oz. of toasted sesame seeds and salt to taste. Put on oiled floured pizza pan, or four loaf pans, set in warm place until it doubles. Minimum of 2 hrs to rise. Then knead well, let rise again in the pan. Or on greased, floured baking sheet. Brush on eggwhite, sesame seeds. Bake at 375 l0 min, then lower to 300 until brown. Cool, If you have 4 loaves, freeze 3, well wrapped in saran wrap or foil.

YUMMY NUT SANDWICH FILLING -(or party dip very similar to Vegie chicken livers.) Ground sprouted Walnuts, pecans, almonds, pre-soaked semi sprouted lentils, cheddar cheese, garlic, soy sauce, lemon juice all blended together. YUMMY! Great party food on crackers.

HOME MADE CRACKERS - Few cups whole grain flour, 2 tbsps or so olive oil, good sea salt, 1/4 cup sesame seeds, blend til heavy dough, fridge hr to let soak up liquid. Roll flat and thin, Put on baking sheet. Bake short time, just golden brown. Cool, break into pieces. Store in those big glass jars with tight lid. Out, as they're gone in a few days, but they encourage after school kids to eat DIPS which they wouldn't otherwise!

EGG SALAD SANDWICH FILLING (can't tell it's tofu!) Mayo (a cup,) gets set on top of a lot of sweet pickles or sweet relish, chopped, celery onions chopped, cilantro, bacon bits. Stir until mixed. Then add l lb box of chopped tofu, Firm, Medium or soft. Throw in a tsp of paprika, a tbsp or two Toasted sesame seeds, I know it's a lot! Chile Sesame oil to taste. Now, set out your pre-toasted COOLED bread slices, cover each pc. with green leaves, we all need some SALAD! Lade the 'egg' salad on top, now it won't soak into bread. Bread stays toasty crispy. Close up and foil or better waxed paper wrap or baggie up each for school or work.

SALAD - THE ULTIMATE VITALITY FOOD- Wash romaine, watercress, spinach, but not head lettuce. Get all dirt out of crevices. Put in colander. TOPPING- sunflower seeds, avocado slices, raisins, mushroom slices, hulled pumpkin seeds (only avail. at HFS), broccoli florets, jicama or sunchoke slices, diced green onions, fresh basil, cilantro or arugula herbs. SERVE with stacks of hot, corn tortillas in a basket. Make 'tacos' of salad. Grow a patch of lusty arugula in your garden. It is invulnerable, self seeds each year. Your friends will rave about the flavor in your salads. Use high calcium raw spinach, too. Now, on every plate, a paper plate, give a bunch of greens and use my fantastic homemade dressing to douse it. HERE is the recipe

YUMMY ALLTIME DRESSING- The base is Half corn oil and half olive oil. NO CANOLA OIL EVER! Take 6 parts of the oil to 1 part lemon juice, (freshly squeezed). Add oregano, mustard powder, thyme, sage to the lemon before you add oil. Let the dried herbs soften. THEN mix oil/lemon. Add for flavoring the secret dynamite, celery seeds, ground, worscestershire sauce, anchovies either ground mashed or as anchovy paste, sliced onions, mashed real not canned garlic, mashed avocado, salt, pepper. You can add some mayo if you want, dried onions/ green onions chopped. I toast pignola nuts and always decorate a salad with 'em.

TOFU SALAMI SALAD.- Mash any fake, soy lunch meats that are available with 1 tsp curry powder, chopped olives, 3 tbsp mayo, 2 tbsp healthfood store no preservative, sweet pickle relish, 1 tsp toasted sesame seeds, 4-10 drops chile sesame oil, chopped celery/olives. Spread on bread. You know how you can tell it's not salami salad? It tastes better!

MAKING SQUASH INTO MEAT- The Garden squash patch gives us black thumbs so much cluck for the buck. It's a real bang to grow squash as they cooperate. BUT, eat it? NOT I! So I set about developing recipes that turn squash into a savory meat-like dish that I WILL eat. You can make this and serve it COLD on the side of any sandwich as a vegie serving.

ZUCH OR SUMMER SQUASH MEATBALLS- Slice in two or three, get seed out and save it for next year's garden. Steam and ream the chunks. By ream, I mean scoop out meat and throw skin away. Put parmesan, butter, bread crumbs, crushed blanched almonds that have been PEELED (boiling water 1 minute, then peel) into the mashed squash. Grate some cheddar or jack in, roll in more crumbs and fry lightly. I like tomatillo sauce over it, (salsa verde) or tomato marinara sauce. Sauce completes the savory meat illusion.

(NOTE: TOMATILLOS are easy to grow. Get some very ripe ones at market, not green but yellow in color. Open these with knife, scoop out seed and dry seed on a napkin. When dry, put in envelope and identify it with label, Plant in April.) To make sauce, simmer a dozen halved, peeled tomatillos, one jalapeno in small amt water. When slightly soft, mash, drop into sauteeing onions, garlic, cook a minute, mashing it as you go, then add chopped cilantro.

BUTTERNUT SQUASH- Saute sliced raw pieces in olive oil, onions, garlic with the seeds and stuff in the fry pan. After browning, add water or broth, seasoning, thyme, water, 1 tsp soy sauce and tomato if desired, steam until soft enough to cut with a fork. Seeds are delicious but discard the shell, eat only the meat inside.

PUMPKIN SOUP- IN COLD WEATHER, a big steaming pot of pumpkin soup will make you so famous. Rich people will offer to buy you a restaurant! Steam and ream the cut pumpkin. Mash the meat then, drop into sauteeing onions and garlic, (olive oil) some pepper corms. Add broth if you're anti-dairy or cream, milk, paremsan, and a tsp of soy sauce, or I've used oyster sauce a soy and ? and it works well. Add thyme, pepper, butter, fresh parsley, basil, or coriander, maybe some cayenne or chile. You can put it thru a food processor to get it very smooth, but I don't bother.

LEMON MERINGUE FISH: Line pie dish w. 'crust' of mashed potatoes, fill with steamed ling cod fillets, cover with thick gravy made of fish pan juices, corn starch, raisins, honey, curry powder, lemon and its zest. Top w. more mashed potatoes, bake. This is shepherd's pie but with fish not lamb. It's a killer recipe.

PINATAS (SWEETS)- Make 'Pinatas' and store in jar in fridge. Each colored paper cone is filled with ribbon-chopped dried cherries, (all from healthfood store, having no sulphur) apricots, peaches, raisins, home-blanched almonds, homemade peanut brittle, and dipped chocolates (red grape center) all made w. no sugar. Larger dried fruits like dates, figs R-stuffed w. nuts or homemade marzipan. (Grind dates, walnuts, home blanched (not purchased skinned) almonds, lemon juice & rind, coconut in blender, add almond extract, roll paste into balls, roll in coconut, put a pecan pc on top.) You will find these natural sugars just as pleasing as the phony stuff that melts the bones out of your body by tampering with your blood calcium levels.

HOLISTIC CHOCOLATE - HEALTHY Chocolate Fudge "Cookie" Bars

20 medium sized dates. Take dates and slice them lengthwise then place them in a cup then cover with water, leave covered with water for 30-60 min. Drain water, then take dates and open them up and scrape interior fibrous stuff out. Place on plate and use a paring knife to mince up the dates. (Have a seat while doing this, It takes a while) You should then have date paste for mixing into chocolate mixture. Chocolate Mixture: 1 tbsp butter 2 teaspoons vanilla, dash salt, 4 - 1 oz. baking squares unsweetened Bakers chocolate 1/3 cup half and half or cream, 1/2 cup Carnation (or similar) dry milk powder (if milk allergies, use ground up plain vanilla healthfood store cookies made into crumbs, cream cheese too. Get inventive! And if you do, get back to me with your tips. Coconut meat, food processed? Walnuts, blanched almonds? Pulverized? (soak almonds overnight or pour boiling water on, and do it immediately. You PEEL, grind into powder. Take one large skillet or pan and fill halfway or so with water and set on low heat while you place another smaller skillet into that one creating a double boiler. Place butter into skillet and then chocolate squares onto that and melt down, stirring not too often. Have all other ingredients ready to go so you can add them all together quickly. Stir in Half and half---then take from heat---then stir in vanilla ----then stir in dry milk powder---this takes time to stir it together into a pudding like-consistency. After this cools, Have an 8" by 8" buttered pan ready. You are now ready to mix your chocolate and your date paste together. Use a strong spoon, and use a mashing motion. This does take finger and wrist strength. But you want to mix these well together. Then mash mixture into the pan, sometimes the bottom of the spoon will work fine, sometimes you will need to use your fingers a little bit. Then cool mixture well. Cut into portions that give a one ounce dose of chocolate, freeze in plastic or foil. Because there is no sugar, you don't get that sugar headache. Just a lush HIGH from the many splendid natural alkaloids in the chocolate.

HIGH ENERGY GOURMET BREAKFAST- Put water-processed Columbian decaf, freshly ground, into pure, spring water in an enamel or stainless pot, water should be just under a simmer, turn off heat, stir in and let brew 1-2 min. Pour thru strainer or natural brown paper filter which does steal a little flavor! Never boil or perk coffee!

BEST TEA: Celestial Seasonings Misty Mango was unbelieveable. The jerks discontinued it. You could try using dried mango slices to get that taste into ordinary black tea like LIPTON's and have a right to call it Mango tea. Constant Comment tea is better than what's left in marketplace. To make either, bring water to 150, drop in loose tea, or tea in a silver holder which you get back from each client let sit 5 minutes. NEVER take a fine tea, or chinese tea's water into high temp. like a boil! Toast 2-pc sprouted grain bread, butter well, get your honey pot which has royal jelly (from HFS) stirred into the honey. Spread thickly. You get on a super busy 'honey bee' jag, do physical work 4-HOURS. If tea is that good it can be black. But Constant Comment is great with milk and honey in it. Deadly GOOD. OR I'd get a reputation making---

100% COLUMBIA COFFEE for a your morning breakfast wagon.- Bring two cups water to an almost boil. TURN OFF FLAME. Drop two tbsps columbia coffee into it. Stir with chopstick. Wait a half min, then strain into their cup. Your customers will go batty. ONLY COLUMBIAN COFFEE WORKS. Trust me. NO other coffee, even expensive ones from Kenya, tastes as good.

DONUTS- Make any yeast batter you like, follow your bread recipe, raise the dough, then make into rings, raise the rings, (1 hr) then drop in hot oil. Dust with powd. Sug.

YOGI TEA - a half gallon of water, gets 4 cinnamon sticks, 10 cloves, 7 cardomon pods, smashed, so seeds inside are revealed AND kind of broken up (use a hammer) an inch long finger of raw ginger root, peeled, sliced. Ten black pepper corms. Simmer l0 min, add a 1/4 cup honey, a cup whole milk, then strain into a glass jar. Reheat a cup for every customer. Worth a buck!
